Ingredients
  

Peach Filling

  • 4 cups fresh peaches, sliced (or canned peaches, drained) Use ripe, fresh peaches for the best flavor.
  • 1/2 cup sugar For the filling.
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Batter

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar For the batter.
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the sliced peaches, 1/2 cup of sugar, cinnamon, and lemon juice. Pour this mixture into a greased 9×13 inch baking dish.
  • In another bowl, combine flour, baking powder, salt, and the remaining 1/2 cup of sugar.
  • Stir in milk, melted butter, and vanilla extract until well combined.

Baking

  • Pour the batter over the peach mixture in the baking dish. Do not stir; the batter will rise while baking.
  • Bake for 40-45 minutes or until the top is golden brown and the peaches are bubbling.
  • Let it cool for a few minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Cover leftovers with plastic wrap or aluminum foil and store in the refrigerator for 3-4 days. Reheat at a low temperature.
