  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 teaspoon fresh rosemary, chopped (or 1/3 teaspoon dried)
  • Salt and pepper to taste
  • 1 cup kale or spinach (optional) Add for extra nutrition

Preparation

  • In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent.
  • Add the minced garlic and fresh rosemary, cooking for another minute until fragrant.
  • Stir in the white beans and vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes.
  • If using, stir in the kale or spinach and cook until wilted.
  • Season with salt and pepper to taste.
  • Serve hot, drizzled with lemon juice.

Notes

This soup tastes great on its own or with a side of crusty bread. You can also pair it with a light salad for a complete meal. Feel free to adjust the seasonings to your taste. For extra creaminess, blend a portion of the soup with an immersion blender.
