Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Make sure the butter is at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup peach preserves
  • 1 cup chopped fresh peaches Use fresh, ripe peaches for best flavor.
  • 1 teaspoon cinnamon You can sprinkle a little extra on top before baking.
  • 0.5 cup rolled oats (optional) Add for a crunchy texture.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the peach preserves and chopped peaches. If using, fold in the rolled oats.
  • Drop spoonfuls of dough onto ungreased baking sheets.

Baking

  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Store the cookies in an airtight container at room temperature for up to a week. For longer storage, refrigerate or freeze them in a freezer-safe container.
