One Pot Teriyaki Chicken Bowls

Ingredients
  

For the Chicken

  • 1 lb chicken breast, diced
  • 1 cup teriyaki sauce

For the Vegetables

  • 2 cups broccoli florets
  • 1 cup bell peppers, sliced

For Serving

  • 2 cups cooked rice
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Sesame seeds for garnish
  • Green onions for garnish

Cooking

  • In a large pot, heat the sesame oil over medium heat. Add the diced chicken and cook until it's browned.
  • Stir in the minced garlic and ginger, cooking for 1 minute until fragrant.
  • Add the teriyaki sauce, broccoli, and bell peppers to the pot.
  • Cover and simmer for about 5-7 minutes until the vegetables are tender and the chicken is cooked through.
  • Serve the chicken and vegetables over cooked rice, and garnish with sesame seeds and green onions.

Notes

To serve, scoop the chicken and vegetables over a bed of rice. Add extra sesame seeds or chopped green onions on top for flavor. Store leftovers in an airtight container in the fridge for 3-4 days; reheat when ready to eat. For variation, use shrimp or tofu instead of chicken.
