  • 4 large large onions Choose large onions for easier stuffing.
  • 1 cup rice Can substitute brown rice or quinoa for a healthier option.
  • 1 cup feta cheese, crumbled Can substitute with goat cheese or mozzarella.
  • 1/4 cup fresh parsley, chopped Feel free to experiment with other herbs.
  • 1/4 cup fresh dill, chopped Experiment with adding other herbs or vegetables.
  • 1/4 cup olive oil
  • 1 whole lemon, juiced
  • Salt and pepper to taste
  • 1 cup vegetable broth Can substitute with water or chicken broth.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the onions and scoop out the insides, leaving a hollow shell.
  • In a skillet, heat olive oil over medium heat.
  • Add the rice and cook for 2 minutes, then add the onion insides and sauté until softened.
  • Stir in the feta, parsley, dill, lemon juice, salt, and pepper.
  • Fill each onion with the rice mixture.

Baking

  • Place the stuffed onions in a baking dish and pour vegetable broth around them.
  • Cover with foil and bake for 30-40 minutes until the onions are tender.
  • Remove the foil and bake for an additional 10 minutes to brown the tops.

Notes

Serve Greek Stuffed Onions warm as a main dish or as a side. They pair well with Greek salad or grilled meats. A sprinkle of extra feta on top adds an appealing touch. Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
