German Cabbage and Dumplings

Ingredients

  • 1 small head chopped cabbage
  • 4 cups all-purpose flour
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 cup sour cream
  • 1/2 lb bacon, chopped Make sure it's crispy for added flavor.
  • 1 medium onion, diced
  • 2 cups water
  • Black pepper to taste

Cooking

  • In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
  • In the same pot, add diced onion and sauté until translucent.
  • Add chopped cabbage and cook until tender.
  • Meanwhile, in a bowl, mix together flour, eggs, salt, and sour cream to form a dough.
  • Bring water to a boil in another pot. Drop spoonfuls of dumpling dough into the boiling water. Cook until they float to the top, about 5 minutes.
  • Remove dumplings and combine with the cabbage mixture, adding the bacon back in.
  • Season with black pepper to taste. Serve warm.

Notes

Serve warm, right after cooking. Pairs well with a side of crusty bread or topped with a dollop of sour cream for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for about 3 days. Reheat on low heat or in the microwave.
