  • 1 pound ribeye steak (cut into 1-inch pieces, trim excess fat)
  • to taste Kosher salt
  • to taste ground black pepper
  • 2-3 teaspoons extra virgin olive oil
  • 2-3 tablespoons butter (you can sub ghee or plant-based butter)
  • 2-3 teaspoons garlic (minced)
  • to taste Fresh parsley (roughly chopped)

Preparation

  • Cut the ribeye steak into 1-inch sized pieces. Pat them dry with clean paper towels and season generously with kosher salt and ground black pepper.

Cooking

  • Bring a large cast iron skillet to medium-high heat. Add 2 teaspoons of extra virgin olive oil and swirl to coat the pan. When the oil is hot, sear the steak on both sides for about 30-60 seconds, depending on thickness. Remove the steak bites from the skillet and place them on a plate.
  • Once all the steak pieces are seared, add 2-3 tablespoons of butter and 2-3 teaspoons of minced garlic to the skillet and let it melt. Return the steak pieces (along with any juices from the plate) to the skillet and toss them in the melted butter until they reach your desired doneness.

Serving

  • Serve the garlic butter steak bites with rice and sautéed zucchini for a complete meal!

Notes

Ensure the skillet is hot enough before adding the steak for a good sear. Don’t overcrowd the pan; cook in batches for best results. Use a meat thermometer to check for doneness accurately. Feel free to add fresh herbs like thyme or rosemary for extra flavor. Store leftovers in an airtight container in the refrigerator for about 3-4 days.
