Ingredients
  

  • 1 packet instant yeast
  • ¾ cup + 2 tablespoons warm water (110-115°F)
  • 1 tablespoon white sugar
  • 2½ cups gluten-free all-purpose baking flour (with xanthan gum)
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 5 tablespoons olive oil
  • 1 egg (room temperature)
  • 1 teaspoon vinegar (white or apple cider)

Instructions
 

  • Dissolve instant yeast in warm water; let rest 5 minutes
  • Add sugar, gluten-free flour, salt, and baking powder to a bowl
  • Pour in yeast mixture, olive oil, egg, and vinegar
  • Mix until smooth, then chill 30 minutes
  • Roll dough to 12-inch size and pre-bake 8-10 minutes at 475°F
  • Add toppings and bake 10-12 minutes more until golden

Notes

Add 1 teaspoon xanthan gum if your flour blend doesn't contain it
Use flax egg (1 tbsp ground flax + 3 tbsp water) for vegan option
Check water temperature to activate yeast properly
Dough can be refrigerated up to 3 days
