Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar Can substitute with coconut sugar.
  • 1 tablespoon ground cinnamon
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 1/2 cup whole milk Almond milk can be used for a dairy-free option.
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract Optional.

Topping

  • 1/4 cup brown sugar, packed
  • 1 tablespoon ground cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper to prevent sticking.
  • In a bowl, mix the flour, granulated sugar, ground cinnamon, baking powder, and salt. Stir well so everything is evenly distributed.
  • In another bowl, whisk together the eggs, whole milk, melted unsalted butter, vanilla extract, and almond extract if you’re using it.

Baking

  • Pour the wet mixture into the dry ingredients. Gently stir until just combined. Be careful not to overmix; a few lumps are okay.
  • In a small bowl, mix the packed brown sugar and ground cinnamon for the topping.
  • Pour the batter into your prepared loaf pan. Sprinkle the cinnamon and brown sugar mixture evenly over the top.
  • Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Make sure your ingredients, especially eggs and butter, are at room temperature for better mixing. To ensure even baking, use an oven thermometer to check your oven's temperature. For a deeper cinnamon flavor, add a little more ground cinnamon to the batter or the topping.
