Ingredients
  

Main Ingredients

  • 1 can kidney beans, drained and rinsed
  • 1/2 cup tomato sauce
  • 1/2 cup vegan cheese, shredded
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • 1/4 cup sliced mushrooms
  • 1/4 cup sliced olives

Seasonings

  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Preparation

  • Rinse and sort the kidney beans. If using dry beans, soak them in water for at least 8 hours or overnight.
  • Drain and rinse the beans. If using dry beans, place them in a large pot, cover with water, and boil for about 1 hour or until tender.
  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Add the onion, bell pepper, and garlic, cooking for 5 minutes until tender.

Mix and Bake

  • Add the oregano, basil, salt, and black pepper to the skillet and stir to combine.
  • Mix in the tomato sauce and cooked beans.
  • Spread the bean mixture evenly on a baking sheet and sprinkle the vegan cheese on top.
  • Bake for 10-15 minutes, or until the cheese is melted and bubbly.
  • Serve hot and enjoy.

Notes

These beans can be paired with a green salad or served over rice or quinoa. They also make a great dip with tortilla chips or pita bread. Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave or on the stovetop.
