  • 2 pieces boneless, skinless chicken breasts
  • 1 cup mango puree (fresh or canned) Use fresh mangoes for better flavor if in season.
  • 2 tablespoons soy sauce Use gluten-free soy sauce (tamari) for a gluten-free version.
  • 1 tablespoon honey Adjust sweetness as desired.
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions
 

Preparation

  • In a bowl, mix together the mango puree, soy sauce, honey, rice vinegar, garlic, and ginger.
  • Season the chicken breasts with salt and pepper.

Cooking

  • In a pan over medium heat, cook the chicken breasts until browned and cooked through, about 6-7 minutes per side.
  • Pour the mango glaze over the chicken in the last 2 minutes of cooking and allow it to thicken slightly.

Serving

  • Once cooked, remove from heat, slice, and serve garnished with chopped green onions.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freezes well if wrapped tightly. Thaw in the fridge before reheating.
