Ingredients
  

Salad Base

  • 4 cups Spring greens Can include a mix of different greens or just your favorite.
  • 2 medium Juicy oranges, segmented Any sweet variety will work.
  • 1 cup Pomegranate seeds Adds a beautiful color and crunch.
  • 1 cup Feta cheese, crumbled Feel free to use a vegan alternative.
  • 1/2 cup Candied pecans Can toast pecans for extra flavor.

Dressing

  • 1/4 cup Olive oil Use high-quality extra virgin for best flavor.
  • 2 tablespoons Vinegar Balsamic or apple cider recommended.
  • 1 tablespoon Honey or maple syrup Adjust sweetness to taste.
  • to taste Salt and pepper Season to your preference.

Preparation

  • In a large bowl, combine the spring greens, segmented oranges, pomegranate seeds, crumbled feta, and candied pecans.
  • In a separate small bowl, whisk together the olive oil, vinegar, honey or maple syrup, salt, and pepper to create the dressing.
  • Drizzle the dressing over the salad and gently toss to combine.

Serving

  • Serve chilled or at room temperature. Garnish with extra pomegranate seeds or nuts.

Notes

Store leftovers in an airtight container in the refrigerator, keeping the dressing separate until ready to serve. Adjust the sweetness of the dressing and feel free to add other winter fruits.
