  • 2 cups shredded chicken
  • 1 can white beans, drained and rinsed
  • 1 can green chiles, diced
  • 4 cups chicken broth
  • 8 oz cream cheese, softened
  • 2 cups Monterey Jack cheese, shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions
 

Preparation

  • In a large pot, sauté the onion and garlic until softened.
  • Add the shredded chicken, white beans, green chiles, chicken broth, cumin, chili powder, salt, and pepper to the pot.
  • Bring the mixture to a boil and then reduce the heat to a simmer.
  • Stir in the cream cheese and Monterey Jack cheese, stirring until everything is melty and creamy.
  • Serve the soup hot, garnished with fresh cilantro if desired.

Notes

Serve with tortilla chips for crunch. For flavor, top with diced avocado, shredded lettuce, or a squeeze of lime. Pairs well with warm tortillas or a side salad.
