Salad Ingredients

  • 15 oz watermelon, cut into 1/2 inch or 1 cm cubes Chill before preparing for extra flavor.
  • 2 tbsp mint, finely sliced Use fresh mint for the best taste.
  • 2 oz feta Crumble just before serving to maintain texture.
  • 1/4 cup red onion, very finely sliced
  • 1 tbsp lime juice
  • 1 tbsp balsamic vinegar Drizzle just before serving.

Preparation

  • Place diced watermelon in a large bowl.
  • Top with mint, red onion, and feta.
  • Squeeze lime juice over the watermelon.
  • Just before serving, drizzle with balsamic vinegar.

Notes

Store any leftovers in an airtight container in the refrigerator for up to two days, and drain excess liquid before serving again. Adding extra mint leaves can give the salad a fresh touch.
