Meatloaf Ingredients

  • 1 lb ground turkey or lean beef Substitute with ground chicken or a plant-based alternative if desired.
  • 1 cup finely chopped spinach or kale
  • 1 cup grated carrots
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs Use gluten-free if desired.
  • 2 large eggs
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste

For the Balsamic Glaze

  • 1/2 cup balsamic vinegar
  • 2 tbsp honey or maple syrup
  • 1 tsp Dijon mustard

Preparation

  • In a large mixing bowl, combine the finely chopped spinach, grated carrots, diced onion, and minced garlic to create the vegetable mixture.
  • Add the ground turkey or lean beef, breadcrumbs, eggs, dried thyme, paprika, salt, and pepper. Mix thoroughly until well combined.
  • Shape the mixture into a loaf shape and place it on a baking sheet lined with parchment paper or into a loaf pan.

Cooking

  • Bake in a preheated oven at 375°F (190°C) for 45-50 minutes until cooked through and golden on top.
  • While the meatloaf is baking, prepare the balsamic glaze by combining balsamic vinegar, honey, and Dijon mustard in a small saucepan. Simmer over medium heat until the mixture reduces by half and becomes syrupy.
  • Remove the meatloaf from the oven, pour the balsamic glaze evenly over the top, and return to the oven for an additional 5 minutes to set the glaze.
  • Allow to rest for a few minutes before slicing.

Notes

Serve warm, sliced, and topped with balsamic glaze. This pairs well with mashed potatoes, steamed vegetables, or a fresh salad. Leftovers can be enjoyed in sandwiches or wraps.
