Ingredients
  

Pancake Mixture

  • 2 cups pancake mix
  • 4 large eggs
  • 2 cups whole milk (or almond milk)
  • 1/2 cup maple syrup for drizzling

Filling

  • 1 lb breakfast sausage links cooked and sliced
  • 1 cup shredded cheddar cheese (or mozzarella) for melting
  • Non-stick baking spray for greasing the baking dish

Instructions
 

Preparation

  • Cook the sausage links over medium heat until golden brown. Slice into bite-sized pieces once cooled.
  • In a mixing bowl, combine pancake mix, milk, and eggs until smooth. The batter should be thick yet pourable.
  • Preheat the oven to 350°F (175°C). Grease a baking dish and pour half of the pancake batter into it.
  • Layer half the sausage and half the cheese on top.
  • Repeat with another layer of pancake batter, remaining sausage, and cheese. Pour any leftover batter on top.

Baking

  • Bake for 30-35 minutes or until golden brown on top and fragrant.

Serving

  • Serve warm, drizzled with maple syrup and a side of fresh fruit if desired.

Notes

For a fluffier texture, let the pancake batter rest for a few minutes before pouring it into the baking dish. Swap out the cheese for your favorite type or add fruits like blueberries or bananas for extra flavor.
