Turkish Gözleme

Turkish Gözleme is a delicious flatbread filled with spinach and cheese, perfect as a snack or light meal.

Ingredients
  

Dough Ingredients

  • 1 cup lukewarm water
  • 3-4 tablespoons milk
  • 1 teaspoon salt
  • 3 cups all-purpose flour May require slightly more if sticky.

Filling Ingredients

  • 500 grams fresh spinach Thoroughly washed and well-drained
  • 2 medium onions Finely chopped
  • 1 teaspoon hot red pepper flakes
  • 1 teaspoon black pepper Sweet red pepper flakes optional
  • Salt to taste
  • 200 grams Turkish white cheese Feta or similar cheese, optional
  • 3 tablespoons butter and/or vegetable oil Or a combination

Instructions
 

Preparing the Dough

  • Mix the lukewarm water and milk in a bowl.
  • Gradually add salt and flour while mixing until a dough forms.
  • Knead the dough until it's soft and elastic, adding more flour if sticky.
  • Cover the dough with a cloth and let it rest for about 30 minutes.

Preparing the Spinach Filling

  • Chop the onions finely and sauté them in a pan with a bit of butter or oil until soft.
  • Add the fresh spinach and cook until just wilted.
  • Season with hot red pepper flakes, black pepper, and salt to taste.
  • If using, crumble in the Turkish white cheese and mix well.

Shaping and Cooking Gözleme

  • Divide the rested dough into small balls.
  • Roll each ball into a thin circle on a floured surface.
  • Place a portion of the spinach filling on half of the circle, then fold over the other half to create a crescent shape.
  • Press the edges to seal.
  • Heat a non-stick pan over medium heat and cook each gözleme for about 3-4 minutes on each side until golden brown and crispy, using butter or oil for added flavor.

Notes

Serve gözleme warm, cut into triangles or halves. Great with yogurt or salad. Store leftovers in plastic wrap in the fridge for up to 3 days or freeze them separated with parchment paper.
