Ingredients
  

Main Ingredients

  • 4 large large potatoes Choose firm potatoes that hold their shape.
  • 2 tablespoons olive oil Adjust to taste.
  • 1 lemon Juice of 1 lemon Add more if desired.
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped For garnish.
  • Fresh dill, chopped For garnish.
  • 1/2 medium red onion, finely chopped

Instructions
 

Preparation

  • Boil the potatoes in salted water until they are tender. Then, drain and let them cool.
  • Once the potatoes have cooled, peel and cut them into cubes.

Mixing

  • In a large bowl, combine the olive oil, lemon juice, salt, and black pepper.
  • Add the chopped potatoes, red onion, parsley, and dill to the bowl. Gently mix until everything is coated.

Serving

  • Serve cold or at room temperature, optionally garnished with extra herbs.

Notes

Store leftovers in an airtight container in the refrigerator for 2 to 3 days. Let the salad sit before serving to enhance flavors.
