  • 4 oz pancetta or bacon, diced Cook until crispy for best flavor.
  • 2 eggs Whisk together with cheese for creamy sauce.
  • 1/2 cup grated Parmesan cheese Add more for sprinkling on top before serving.
  • 2 cloves garlic, minced Adds flavor, sauté for 1 minute.
  • Salt and pepper to taste Adjust seasoning according to your taste.
  • Fresh parsley for garnish Chop fresh parsley to enhance presentation.

Preparation

  • Cook the tortellini according to package instructions; drain and set aside.
  • In a large skillet, cook the pancetta or bacon over medium heat until crispy.
  • Add minced garlic and sauté for 1 minute.
  • In a bowl, whisk together eggs, Parmesan cheese, salt, and pepper.
  • Add the cooked tortellini to the skillet and remove from heat.
  • Quickly pour the egg and cheese mixture over the tortellini, stirring until creamy.
  • Garnish with fresh parsley and serve immediately.

Notes

Serve hot, directly from the skillet. It's great on its own or with a side salad or garlic bread. Store leftovers in an airtight container in the fridge for 2-3 days and reheat gently.
