Ingredients
  

Pasta and Main Ingredients

  • 250 g tortellini (cheese-filled) Use fresh tortellini for best taste.
  • 100 g bacon or pancetta, diced Adjust based on taste preference.
  • 2 large eggs Whisk with cheese for the sauce.
  • 50 g Parmesan cheese, grated Can be substituted with Grana Padano.
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish) Add for color and flavor.

Preparation

  • Cook the tortellini according to package instructions until al dente. Drain and set aside, reserving some pasta water.

Cooking

  • In a large skillet over medium heat, cook the bacon or pancetta until crispy.
  • Add the minced garlic and sauté for 1 minute.
  • In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and pepper.
  • Add the cooked tortellini to the skillet with the bacon and garlic. Remove from heat and quickly pour the egg mixture over the pasta, tossing to combine.
  • If the sauce is too thick, add reserved pasta water a tablespoon at a time until creamy.

Serving

  • Serve immediately, garnished with chopped parsley.

Notes

If you have leftovers, store in an airtight container in the fridge for up to 3 days. Reheat in a skillet over low heat, adding a little water or milk to loosen the sauce. Not recommended to freeze.
