Sandwich Components

Preparation

  • In a bowl, combine the diced tomatoes, basil, balsamic vinegar, salt, and pepper. Mix well to create a bruschetta topping.
  • Butter one side of each slice of bread.

Assembly and Cooking

  • On the unbuttered side of two slices, layer half of the mozzarella cheese, add a portion of the bruschetta topping, and top with the remaining cheese.
  • Place the other slices of bread on top, buttered side up.
  • Heat a skillet over medium heat and grill the sandwiches until golden brown on both sides and the cheese is melted, about 3-4 minutes per side.

Serving

  • Slice and serve warm.

Notes

Pair with a light salad or soup for a complete meal. Garnish with extra basil or a drizzle of balsamic reduction for added flavor. Leftovers can be stored in the fridge for up to two days.
