  • 1/2 cup chia seeds
  • 2 cups almond milk (or any plant-based milk)
  • 1/2 cup strong brewed coffee, cooled
  • 1/4 cup maple syrup or sweetener of choice
  • 1/2 cup mascarpone cheese (or a vegan alternative)
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract

Preparation

  • In a mixing bowl, combine chia seeds and almond milk. Stir well to prevent clumping.
  • Add brewed coffee, maple syrup, mascarpone cheese, cocoa powder, and vanilla extract. Mix until smooth.
  • Let the mixture sit for about 5 minutes, then stir again to break up any clumps.
  • Divide the mixture into serving jars or bowls.
  • Refrigerate overnight or for at least 2 hours to allow it to thicken.
  • Serve chilled, optionally topped with additional cocoa powder or chocolate shavings.

Notes

Make sure to stir the chia seed mixture well to avoid clumps. Adjust the sweetness to your taste. If you prefer a creamier pudding, blend the mixture for a few seconds before chilling.
