  • 4 pieces tilapia fillets
  • 2 pieces red bell peppers
  • 1 clove garlic, minced
  • 1 tablespoon olive oil plus additional for roasting
  • to taste Salt and pepper
  • 1 tablespoon fresh parsley, chopped for garnish
  • 1 tablespoon lemon juice for drizzling

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Slice the red bell peppers and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 20 minutes until tender.

Cooking

  • In a skillet, heat the remaining olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Season the tilapia fillets with salt and pepper. Add them to the skillet and cook for 3-4 minutes on each side until golden and cooked through.
  • Blend the roasted peppers into a sauce using a blender or food processor.

Serving

  • Serve the tilapia topped with roasted pepper sauce, drizzle with lemon juice, and garnish with fresh parsley.

Notes

For additional flavor, consider adding a pinch of your favorite spices to the tilapia. If you like heat, add crushed red pepper flakes to the roasted peppers while blending. Store leftovers in an airtight container in the refrigerator for up to 2 days.
