Main Ingredients

  • 4 fillets tilapia fillets (about 1 lb) You can substitute with other white fish like cod or halibut.
  • 1 cup roasted red peppers (jarred or homemade) Look for jarred peppers packed in water or oil without preservatives.
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice Adjust according to taste.
  • 1/4 cup low-sodium chicken broth
  • to taste Salt and pepper Adjust seasoning to your preference.
  • to garnish Fresh basil or parsley

Preparation

  • Preheat your oven to 400°F (200°C). Grease a baking dish with nonstick spray.
  • Blend the roasted red peppers, garlic, olive oil, lemon juice, salt, and pepper until smooth.
  • Pour half of the sauce into the baking dish and place the tilapia fillets on top.
  • Coat the fillets with the remaining sauce.

Cooking

  • Bake for 20-25 minutes until the fish flakes easily with a fork.
  • Garnish with fresh herbs before serving.

Notes

You can store any leftover tilapia in an airtight container in the refrigerator for up to 2-3 days. Reheat in the microwave or oven.
