  • 2 medium Cucumbers Thinly sliced
  • 2 medium Carrots Thinly sliced
  • 1 large Red bell pepper Thinly sliced
  • 2 cups Cabbage Shredded
  • 3 stalks Green onions Chopped
  • 1/2 cup Cilantro Chopped

Dressing Ingredients

  • 1/4 cup Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 teaspoon Sugar
  • 1/2 teaspoon Salt

Preparation

  • Thinly slice the cucumbers, carrots, red bell peppers, and cabbage.
  • Chop the green onions and cilantro.
  • In a large bowl, combine the sliced vegetables with the green onions and cilantro.
  • In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, sugar, and salt.
  • Pour the dressing over the salad and toss to combine.
  • Let it sit for about 10 minutes to allow the flavors to meld, then serve.

Notes

Use fresh ingredients for the best flavor and texture. Feel free to adjust the dressing ingredients to suit your taste. Add some crushed peanuts or seeds for extra crunch. For a spicier kick, include some chopped chili peppers or hot sauce. Store the salad in an airtight container in the fridge and best eaten within a day or two.
