  • 2 cups cooked, shredded chicken (rotisserie chicken works perfectly)
  • 1 block (8 oz) cream cheese, softened
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing (or blue cheese dressing for tang)
  • 1 cup shredded cheddar cheese, divided 1/2 cup for cooking, 1/2 cup for topping
  • 1/4 cup crumbled blue cheese (optional) For added tang
  • 2 tablespoons chopped green onions, for garnish

Instructions
 

Preparation

  • Add shredded chicken, softened cream cheese, buffalo sauce, ranch dressing, and half of the cheddar cheese to your slow cooker. Stir to combine evenly.
  • Cover and cook on low for 2–3 hours, stirring occasionally until the mixture is smooth and melted.
  • Sprinkle remaining cheddar cheese and blue cheese on top. Cover again for 10 minutes to melt.
  • Garnish with green onions and serve hot with tortilla chips, celery, or baguette slices.

Notes

Adjust the spice level by choosing mild or hot buffalo sauce. Keep on the 'warm' setting during parties for consistent texture. Leftovers make great sandwich or wrap fillings the next day. You can assemble the ingredients up to 24 hours ahead and cook when ready.
