Ingredients

  • 2-3 pounds boneless, skinless chicken breasts
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons smoked paprika
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 18 ounces barbecue sauce

Instructions

  • Spray the slow cooker insert thoroughly with nonstick cooking spray.
  • Place the chicken breasts at the bottom of the slow cooker.
  • Season the chicken evenly with the kosher salt, black pepper, and smoked paprika.
  • Top the seasoned chicken with the diced onion and the minced garlic.
  • Pour the barbecue sauce over the top of the chicken and aromatics.
  • Cover and cook on low for 8 hours.
  • Once cooked, shred the chicken directly in the pot using two forks, ensuring it is well-coated in the sauce.

Notes

You can substitute chicken breasts with boneless chicken thighs for a fattier, more succulent texture. Ensure your BBQ sauce does not contain any alcohol-based ingredients. Store leftovers in an airtight container in the refrigerator for up to 3 days.
