  • 3 medium shallots
  • 16 ounces frozen peas Fresh peas can be substituted.
  • 1 pear Peeled, sliced, and diced.
  • 1 teaspoon Dijon mustard Adjust to taste.
  • 1 lemon Juiced and zested.
  • ½ cup parsley
  • Freshly ground black pepper To taste.

Preparation

  • Prep the pear by peeling, slicing, and dicing it. Mix with lemon juice in a small bowl and set aside.
  • Heat a large skillet over medium heat and cook the turkey strips until golden brown. Remove with a slotted spoon and drain excess fat.

Cooking

  • Add sliced shallots to the skillet and cook for one minute before stirring in Dijon mustard.
  • Incorporate peas and diced pears into the pan; stir until warmed through (about five minutes).
  • Remove from heat; add half of the cooked turkey strips, parsley, and black pepper.
  • Transfer to a serving bowl, top with remaining turkey strips, garnish with lemon zest, and serve.

Notes

Serve warm as a delicious side dish that pairs well with roasted turkey, stuffing, and cranberry sauce. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat before serving. For a vegetarian version, substitute turkey strips with sautéed mushrooms or tofu.
