Peanut sauce ingredients

  • 1/2 cup peanut butter
  • 1/4 cup soy sauce Use gluten-free soy sauce to make it gluten-free.
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon sesame oil
  • 1/4 cup chopped peanuts For garnish
  • Fresh cilantro For garnish

Preparation

  • Cook the rice noodles according to package instructions, then drain and set aside.
  • In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, and sesame oil to create the sauce.
  • In a large mixing bowl, combine the cooked rice noodles, shredded chicken, sliced bell peppers, carrots, and cucumber.
  • Pour the peanut sauce over the noodle mixture and toss until everything is well coated.

Serving

  • Serve in bowls, topped with chopped peanuts and fresh cilantro.

Notes

Make sure to cook the noodles al dente for the best texture. You can adjust the amount of peanut butter and soy sauce based on your taste preference. Feel free to add other vegetables like snap peas or broccoli for extra nutrition.
