Thai Basil Beef Rolls

Ingredients
  

Filling Ingredients

  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 450 g ground beef
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon brown sugar
  • 0.25 teaspoon ground white pepper
  • 1 cup Thai basil leaves, chopped
  • 12 pieces rice paper wrappers
  • 0.5 cup shredded carrot
  • 0.5 cup cucumber, julienned
  • 0.25 cup green onions, chopped
  • 0.5 cup fresh mint or cilantro leaves

Dipping Sauce Ingredients

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 0.5 teaspoon chili flakes
  • 1 tablespoon water
  • 0.5 teaspoon sesame seeds optional

Instructions
 

Preparation

  • Heat sesame oil in a skillet or wok.
  • Add garlic and red chili; stir for 30 seconds.
  • Add ground beef and cook for 5–7 minutes until browned.
  • Stir in soy sauce, fish sauce, brown sugar, and white pepper. Cook for 2–3 more minutes.
  • Add chopped Thai basil, stir, and remove from heat. Let cool.

Rolling

  • Fill a large bowl with warm water. Set up your damp rolling surface.
  • Dip one rice paper wrapper in water for 5–8 seconds and lay it flat.
  • Layer basil or mint leaves, beef mixture, carrots, cucumber, and onions in the center.
  • Fold the bottom over the filling, then fold the sides, and roll tightly.
  • Repeat with the remaining wrappers and filling.
  • Slice rolls in half with a sharp knife.

Dipping Sauce

  • Mix all dipping sauce ingredients in a bowl.
  • Serve rolled beef with dipping sauce and extra herbs if desired.

Notes

Store leftover rolls in an airtight container in the fridge. Best eaten within 1-2 days. For advance preparation, keep the filling and rice wrappers separate until ready to roll. Make sure the water for dipping rice paper is warm, not hot. Prep all fillings before starting to roll. If rice paper is too sticky, wet your hands lightly.
