Ingredients
  

Stuffed Peppers

  • 4 medium medium bell peppers (any color)

Chicken Mixture

  • 1 pound boneless, skinless chicken breast, diced
  • 1 cup cooked rice (white or brown)
  • 1 cup fresh pineapple, chopped (or canned, drained)
  • 1/2 cup teriyaki sauce
  • 1 tablespoon vegetable oil
  • 2 stalks green onions, chopped
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • Salt and pepper, to taste
  • Sesame seeds and additional green onions for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the tops off the bell peppers and remove the seeds and membranes. Place the peppers standing upright in a baking dish.

Cooking

  • In a large skillet, heat the vegetable oil over medium heat. Add the diced chicken and cook until browned, around 5-7 minutes.
  • Add in minced garlic and ground ginger. Stir for an additional minute until fragrant.
  • Add the cooked rice, chopped pineapple, and teriyaki sauce to the skillet. Stir everything together and season with salt and pepper to taste.

Assembly and Baking

  • Carefully spoon the chicken and rice mixture into each prepared bell pepper, packing it down slightly.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for about 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes to allow the tops to brown.

Garnish and Serving

  • Remove the peppers from the oven, sprinkle with sesame seeds and chopped green onions, and allow to cool for a few minutes before serving.

Notes

Feel free to use other proteins like shrimp or tofu. For added nutrition, include vegetables like carrots or peas in the rice mixture. You can substitute quinoa for rice for a healthier twist.
