  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cheddar cheese, shredded
  • 1 cup sour cream
  • 1 medium tomato, diced
  • 0.25 cup green onions, thinly sliced
  • 0.25 cup fresh cilantro, chopped

Instructions

  • Preheat your oven to 400°F (200°C).
  • Scrub the russet potatoes clean and pierce them several times with a fork.
  • Brush each potato with olive oil and sprinkle with salt.
  • Bake for 60 minutes or until tender.
  • While potatoes bake, brown the ground beef in a skillet over medium heat.
  • Stir in the taco seasoning and prepare according to packet instructions.
  • Once potatoes are done, slice them open and fluff the insides with a fork.
  • Stuff the potatoes with the seasoned beef, black beans, corn, and shredded cheese.
  • Return to the oven for 3-5 minutes until the cheese is melted.
  • Top with sour cream, diced tomatoes, green onions, and fresh cilantro before serving.

Notes

Use Greek yogurt as a high-protein substitute for sour cream. You can substitute ground turkey for ground beef for a lighter version. Ensure potatoes are uniform in size to guarantee even cooking.
