  • 3 large large flour tortillas
  • 2 cups cooked chicken, shredded Use pre-cooked rotisserie chicken for convenience.
  • 1 cup shredded cheese Cheddar or a blend can be used.
  • 1/2 cup chipotle sauce Adjust based on your spice preference.
  • 1 tbsp olive oil

For serving

  • Sour cream For serving.
  • Salsa For serving.

Instructions
 

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Place one tortilla in the skillet, and layer half of the cheese, all of the shredded chicken, and the chipotle sauce on top.
  • Add another layer of cheese, then top with another tortilla.
  • Cook until the bottom tortilla is golden brown, about 2-3 minutes.
  • Carefully flip the quesadilla and cook the other side until golden brown and cheese is melted.
  • Remove from skillet and cut into wedges.

Notes

Serve the quesadillas hot, cut into wedges. These are great as a main dish or snack for parties and gatherings. If storing leftovers, let them cool, wrap tightly, and store in the refrigerator for 2-3 days. Reheat in a skillet or microwave.
