Ingredients
  

For the patties

  • 2 cups sweet potatoes, mashed Make sure they are well mashed to avoid lumps.
  • 1 cup red lentils, cooked Canned lentils work great for convenience.
  • 1/2 cup breadcrumbs Use more if the mixture is too wet.
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin Adjust spices to taste.
  • Salt and pepper to taste
  • Oil for frying Use a neutral oil.

For the sauce

  • 1 medium avocado Blend until smooth.
  • 1/4 cup cilantro
  • 1 tbsp lime juice
  • 1/4 cup mango chutney Can substitute with spicy salsa.

Instructions
 

Preparation

  • In a bowl, combine the mashed sweet potatoes, cooked red lentils, breadcrumbs, onion, garlic, cumin, salt, and pepper. Mix well.
  • Form the mixture into patties.

Cooking

  • Heat oil in a frying pan over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.

Sauce Preparation

  • Blend the avocado, cilantro, lime juice, and a pinch of salt until smooth.

Serving

  • Serve the patties topped with the creamy avocado cilantro sauce and a drizzle of mango chutney glaze.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to two months. Reheat by baking or pan-frying until hot. Great for snacks or meals.
