  • 6-8 medium Medium Sweet Potatoes Fresh sweet potatoes provide the best texture.
  • 8 TBSP Unsalted Butter Can substitute with coconut oil for a dairy-free version.
  • 2 TSP Ground Cinnamon
  • 1.5 Cup Granulated Sugar Can be adjusted based on preferred sweetness.
  • 1 Cup Dark Brown Sugar
  • 1 TBSP Pure Vanilla Extract
  • 2 TSP Orange Juice Freshly squeezed is best.
  • 1-2 TSP Orange Zest Adjust based on taste preference.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Peel and chop the sweet potatoes, then boil them in a large pot until tender.

Mixing

  • Drain the sweet potatoes and return them to the pot.
  • Add the unsalted butter, ground cinnamon, granulated sugar, dark brown sugar, pure vanilla extract, orange juice, and orange zest to the sweet potatoes.
  • Mash the mixture until smooth and well combined.

Baking

  • Spread the sweet potato mixture into a greased baking dish.
  • Bake in the preheated oven for about 25-30 minutes or until heated through.

Serving

  • Serve warm as a side dish or light meal.

Notes

For a sweeter option, consider adding mini marshmallows or nuts on top before baking. Let the casserole cool before storing; it will keep in the fridge for up to 3 days or can be frozen for up to 2 months.
