Ingredients
  

For the meatballs

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

For the soup

  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup diced potatoes
  • 1 cup diced carrots
  • 1 cup chopped spinach
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

Preparation of meatballs

  • In a bowl, mix together ground beef, breadcrumbs, Parmesan cheese, egg, salt, pepper, garlic powder, and onion powder. Form into small meatballs.

Cooking the soup

  • In a large pot, bring beef broth to a boil.
  • Add meatballs to the broth and simmer for 10 minutes.
  • Add diced potatoes and carrots, and let cook until tender, about 15 minutes.
  • Stir in heavy cream and chopped spinach, cooking for an additional 5 minutes.
  • Garnish with fresh parsley and serve warm.

Notes

Serve this soup hot in bowls with some meatballs and vegetables in each serving. Offering crusty bread or a side salad complements the meal well.
