Ingredients
  

2 lbs yellow potatoes, cubed

1 lb smoked sausage, sliced

3 cups green beans (fresh or canned)

1 onion, chopped

2 tbsp olive oil or butter

2 tsp Cajun seasoning

Salt and pepper to taste

Instructions
 

Wash and cube potatoes into even chunks.

Slice smoked sausage and chop the onion.

Layer potatoes, sausage, and onion in a slow cooker.

Sprinkle with Cajun seasoning, salt, and pepper.

Drizzle with olive oil or butter.

Add green beans on top.

Cover and cook on low for 6 hours or high for 3–4 hours.

Serve hot with cornbread or rice.

    Notes

    For a vegetarian version, use plant-based sausage or skip the meat and add extra vegetables. Leftovers can be refrigerated up to 4 days or frozen for 2 months.
