  • 1 large ripe tomato (beefsteak-style is best), unrefrigerated Use a very ripe tomato for the best flavor and juiciness.
  • 2–3 slices organic shaved turkey Yes, it has to be shaved.
  • 1 heaping tablespoon cottage cheese Use more cottage cheese than mustard unless you like it strong.
  • 1 teaspoon Dijon mustard (Grey Poupon or don’t bother)
  • Everything bagel seasoning Don't skip this; it adds a crunch and depth of flavor.
  • Optional: fresh basil or arugula Feel free to experiment with different herbs or greens.

Preparation

  • Slice the tomato into thick rounds and place them on a plate.
  • Layer the shaved turkey on top of the tomato slices.
  • In a small bowl, mix the cottage cheese with the Dijon mustard.
  • Spoon the cottage cheese mixture over each tomato and turkey stack.
  • Top with everything bagel seasoning. Add fresh basil or arugula if desired.
  • Eat immediately, preferably standing up!

Notes

This snack is best eaten fresh. If you have leftover ingredients, store them separately in the fridge. Assemble the snack when you're ready to enjoy it, to maintain freshness.
