  • 1 15 oz can chickpeas, drained and rinsed Rinse well to remove excess sodium.
  • 1/2 cup sun-dried tomatoes, packed in oil Adjust based on desired flavor strength.
  • 1/4 cup tahini For a creamier consistency, use more tahini.
  • 2 tablespoons olive oil Add more for creaminess if desired.
  • 2 cloves garlic, minced Freshly minced adds more flavor.
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground cumin
  • to taste Salt and pepper Adjust to taste.
  • as needed Water Add until desired consistency is reached.

Preparation

  • In a food processor, combine the chickpeas, sun-dried tomatoes, tahini, olive oil, garlic, lemon juice, cumin, salt, and pepper.
  • Blend until smooth, adding water one tablespoon at a time until you reach the desired consistency.
  • Taste the hummus and adjust the seasoning if needed.

Serving

  • Serve with pita bread, fresh vegetables, or as a spread on your favorite sandwiches.

Notes

Store any leftover hummus in an airtight container in the refrigerator for about 4 to 5 days. Stir in a little water or olive oil if it thickens in the fridge. You can also add herbs like basil or thyme for variation, or a dash of hot sauce for spiciness.
