Ingredients
  

For the Mashed Potatoes

  • 3-5 large large potatoes Enough to yield about 4 cups of mashed potatoes
  • 3.5 tbsp butter Melted
  • Salt
  • Smoked paprika
  • Black pepper
  • Oregano To taste
  • Fresh dill Chopped, for garnish

For the Meat Filling

  • 1.1 lbs ground beef
  • 1 onion Finely chopped
  • 2 garlic cloves Minced
  • 1 red bell pepper Diced
  • 1 large tomato Diced
  • 2.5 oz tomato paste
  • 3.5 oz mozzarella cheese Shredded
  • Salt and black pepper To taste
  • Fresh parsley Chopped, for garnish

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Peel and boil the potatoes until tender. Drain and mash them with melted butter, salt, smoked paprika, black pepper, and oregano.
  • Press the mashed potatoes into the cups of a muffin tin to form nests.

Baking Nests

  • Bake for 15 minutes until slightly firm.

Cooking Filling

  • While the nests bake, cook the ground beef in a pan over medium heat until browned.
  • Add onion, garlic, bell pepper, and tomato. Cook until vegetables soften.
  • Stir in tomato paste and season with salt and black pepper. Cook for another 2 minutes.

Assembly

  • Fill the potato nests with the ground beef mixture.
  • Top with shredded mozzarella.

Final Baking

  • Bake for another 10 minutes until the cheese melts and bubbles.
  • Garnish with fresh dill and parsley before serving.

Notes

Use a potato ricer for extra creamy mashed potatoes. Experiment with different types of ground meat for the filling, like turkey or chicken. Add your favorite veggies to the meat mixture for added nutrition and flavor. Make sure not to overfill the nests to avoid spilling over during baking. For a vegetarian option, replace the ground beef with cooked lentils or sautéed mushrooms.
