Ingredients
  

  • 3 cups strawberries, chilled, topped cut off and trimmed
  • 2 tablespoons fresh mint, chiffonade or finely chopped
  • 3 cups watermelon, chilled, cubed
  • 2 tablespoons olive oil
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh lime juice
  • 1 1/2 teaspoons honey
  • 1/2 teaspoon chia seeds
  • Pinch crushed sea salt flakes
  • Freshly ground black pepper to taste

Instructions
 

  • 1. In a large bowl, combine strawberries, watermelon, and chia seeds.
  • 2. Gently stir in crumbled feta and chopped mint.
  • 3. Prepare vinaigrette: In a small jar, combine olive oil, lime juice, honey, sea salt, and black pepper. Shake or whisk until emulsified.
  • 4. Drizzle dressing over salad just before serving. Adjust seasoning to taste.

Notes

Use dairy-free feta for vegan version
Substitute cantaloupe for watermelon or raspberries for strawberries
Add crumbled blue cheese for a bolder flavor
Serve chilled as a side or over greens for a main course
