Ingredients
  

8 small flour tortillas4 tbsp butter, melted½ cup sugar + 1 tsp cinnamon (for coating)8 oz cream cheese, softened1 cup powdered sugar1 tsp vanilla extract1 cup whipped topping (Cool Whip or homemade)20 golden Oreos (or vanilla wafers), crushed½ cup freeze-dried strawberries (or 1 pack strawberry gelatin mix)Optional: white chocolate drizzle, fresh strawberries

Instructions
 

Brush tortillas with butter, coat in cinnamon sugar, and shape into taco shells. Bake or fry until crisp.In a bowl, whip cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped topping.For topping: combine crushed cookies and freeze-dried strawberries (or gelatin mix).Pipe cheesecake filling into cooled taco shells.Sprinkle generously with strawberry crunch topping.Drizzle with white chocolate and garnish with fresh strawberries if desired.Serve immediately or refrigerate up to 24 hours.
