Ingredients
  

For the Strawberry Jam

  • 500 g 500 g strawberries (fresh or frozen)
  • 50 g 50 g granulated sugar
  • 1 tablespoon 1 tablespoon water

For the Chocolate Cake

  • 190 g 190 g all-purpose flour
  • 75 g 75 g natural cocoa powder
  • 1 teaspoon 1 teaspoon baking powder
  • 1/2 teaspoon 1/2 teaspoon baking soda
  • 1/2 teaspoon 1/2 teaspoon salt
  • 115 g 115 g unsalted butter (melted)
  • 100 g 100 g light-tasting oil
  • 100 g 100 g granulated sugar
  • 100 g 100 g brown sugar
  • 2 large 2 large eggs (room temperature)
  • 330 g 330 g milk (room temperature)

For the Strawberry Cream Cheese Frosting

  • 250 g 250 g cream cheese (softened to room temperature)
  • 115 g 115 g unsalted butter (softened to room temperature)
  • 100 g 100 g powdered sugar
  • 70 g 70 g strawberry jam (from above)
  • 1 teaspoon 1 teaspoon vanilla extract
  • 200 g 200 g strawberries (finely diced)
  • 7 7 strawberries (halved for decoration)

Instructions
 

Make the Strawberry Jam

  • In a saucepan, combine 500 g of strawberries, 50 g of granulated sugar, and 1 tablespoon of water. Cook over medium heat until the strawberries break down and the mixture thickens. Let it cool.

Bake the Chocolate Cake

  • Preheat the oven to 180°C (350°F).
  • In a bowl, mix 190 g of flour, 75 g of cocoa powder, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
  • In another bowl, whisk together 115 g of melted butter, 100 g of light oil, 100 g of granulated sugar, and 100 g of brown sugar.
  • Add 2 eggs one by one and mix well.
  • Then add 330 g of milk and mix until smooth.
  • Gradually add the dry ingredients to the wet ingredients and mix until combined.
  • Pour the batter into a prepared cake pan.
  • Bake for 25-30 minutes. Let it cool completely.

Make the Strawberry Cream Cheese Frosting

  • In a large bowl, beat 250 g of softened cream cheese and 115 g of softened butter until smooth.
  • Gradually add 100 g of powdered sugar and mix well.
  • Then add 70 g of the strawberry jam and 1 teaspoon of vanilla extract.
  • Fold in 200 g of finely diced strawberries.

Assemble the Cake

  • Once the cake has cooled, place one layer on a serving plate.
  • Spread a generous amount of strawberry cream cheese frosting on top.
  • Add the second layer and cover the entire cake with more frosting.
  • Decorate with the halved strawberries.

Notes

Ensure all ingredients are at room temperature for best results. Adjust strawberries for frosting according to taste. Add more cocoa powder for a richer chocolate flavor.
