Ingredients
  

For the donuts

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract

For the cheesecake filling

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract (for filling)
  • 1 cup fresh strawberries, diced
  • 1 tbsp lemon juice (optional)

For coating

  • 1/4 cup granulated sugar (for coating)
  • 1 tsp cinnamon (optional)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and lightly grease a donut pan.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract together.
  • Combine the wet and dry ingredients, mixing just until combined. Do not overmix.
  • Spoon or pipe the batter into the donut pan, filling each cavity halfway.

Baking

  • Bake for 10-12 minutes, or until a toothpick inserted comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.

Cheesecake Filling

  • To make the cheesecake filling, beat the cream cheese until smooth, then mix in powdered sugar and vanilla extract. Fold in strawberries and lemon juice.
  • Once the donuts are cooled, use a piping bag with a narrow tip to fill the center of each donut with the cheesecake mixture.

Coating

  • Optional: Mix sugar and cinnamon in a bowl, then roll each donut in the mixture for coating.

Notes

These donuts are best served fresh. You can enjoy them warm or at room temperature. They make a great addition to brunch or can be served as a fun dessert. Pair them with some whipped cream or a drizzle of chocolate for an extra treat.
