  • 1 lb ground beef (or chicken/turkey)
  • ½ onion finely chopped
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 1 bunch bok choy (stems and leaves separated)
  • ¼ cup water or chicken broth

Cooking Instructions

  • In a skillet or wok, heat the olive oil over medium-high heat.
  • Add the minced garlic, ginger, and finely chopped onion. Stir until fragrant.
  • Add the ground meat to the skillet and cook until it is fully browned.
  • Stir in the soy sauce, oyster sauce (if using), sesame oil, salt, black pepper, and red pepper flakes (if using).
  • Add the bok choy stems and cook for about 2 minutes. Pour in the water or chicken broth.
  • Add the bok choy leaves and stir-fry until they are wilted.
  • Serve hot over rice or noodles.

Notes

Make sure not to overcook the bok choy; you want it to stay crunchy and vibrant. Use a large skillet or wok so you have enough room to stir everything well. Feel free to add other vegetables like bell peppers, carrots, or snap peas for extra color and nutrition.
