Ingredients
  

Main Ingredients

  • 3 pounds Russet Potatoes, peeled and cut into 1" pieces Choose Russet potatoes for their fluffy texture.
  • 1/2 cup Unsalted Butter
  • 2 teaspoons Salt Adjust to taste.
  • 1/2 teaspoon Black Pepper Adjust to taste.
  • Water Enough to cover the potatoes.

Instructions
 

Preparation

  • After peeling the potatoes, cut them into 1" pieces and add them to a small pot.
  • Cover the potatoes with enough cold water just to cover the top.
  • Place the butter on top of the potatoes.

Cooking

  • Turn on the heat and bring the water to a boil.
  • Season the potatoes with salt and pepper.
  • Once boiling, reduce the heat to medium, allowing it to cook at a low roll and stirring often.
  • Cook for about 25 minutes or until the potatoes are soft and the water has mostly evaporated, leaving behind a thick potato juice.

Serving

  • Serve with a sprinkle of parsley or green onions for added color and flavor.

Notes

Stewed potatoes can be served on their own or as a side. They pair well with meats like roasted chicken or beef stew. Store leftovers in an airtight container in the refrigerator for 3 to 5 days. Reheat gently before serving.
