  • 4 pieces salmon fillets Skin-side down
  • 1 cup fresh spinach Use fresh for better texture
  • 1/2 cup feta cheese, crumbled Can substitute with cream cheese or ricotta
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil Used for sautéing
  • 1 teaspoon dried dill
  • Salt and pepper to taste
  • Toothpicks or kitchen twine For securing pinwheels

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat the olive oil over medium heat and sauté the garlic until fragrant.
  • Add the spinach and cook until wilted.
  • In a mixing bowl, combine the cooked spinach, feta cheese, dill, salt, and pepper.
  • Lay the salmon fillets skin-side down and spread the spinach mixture evenly over each fillet.
  • Carefully roll each fillet into a pinwheel shape and secure with toothpicks or kitchen twine.
  • Place the pinwheels on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through.

Notes
