  • 1 teaspoon Baking Powder Ensure it’s fresh
  • 1 teaspoon Salt Opt for sea salt
  • 2 cups Baby Spinach Finely chopped; kale can be substituted
  • 1 cup Shredded Mozzarella Cheese Feta for a tangier flavor

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the cottage cheese and olive oil until well combined.
  • Add the egg and stir in until the mixture is smooth.
  • In another bowl, combine the flour, baking powder, and salt. Mix well to combine.
  • Gradually add the dry ingredients to the wet mixture. Stir until just combined.
  • Gently fold in the chopped spinach and mozzarella cheese until evenly distributed.
  • Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, shaping them into bagel-like forms.
  • Bake for about 20-25 minutes or until golden brown and cooked through.
  • Let them cool slightly before serving.

Notes
