Preparation

  • Boil the Eggs: Place the eggs in a pot, cover with water, and bring to a boil. Once boiling, turn off the heat and cover for about 12 minutes. Transfer to cold water to cool.
  • Peel the Eggs: Once the eggs are cool, peel the shells carefully.
  • Cut the Eggs: Slice each egg in half lengthwise and remove the yolks into a mixing bowl.
  • Mix the Filling: Add mayonnaise, Dijon mustard, chili garlic sauce, rice vinegar, salt, and pepper to the yolks. Mash everything together until smooth.
  • Taste and Adjust: Sample the filling and adjust the spice level by adding more chili garlic sauce or sriracha if desired.
  • Fill the Egg Whites: Spoon or pipe the yolk mixture back into the egg whites.
  • Garnish: Top the filled eggs with chopped cilantro or green onions for a fresh touch.

Notes

Make sure to cool the boiled eggs completely before peeling to prevent breakage. You can prepare the filling in advance and fill the eggs just before serving for better presentation. For a fun twist, add different spices or herbs to the filling, such as smoked paprika or dill.
