  • 400 g canned chickpeas drained and rinsed
  • 2 medium ripe avocados mashed
  • ½ medium red onion diced
  • 1 medium bell pepper diced
  • 1 small jalapeño diced
  • 2 tbsp lime juice

Preparation

  • In a mixing bowl, mash the avocados until smooth.
  • Stir in the chickpeas, diced onion, bell pepper, jalapeño, lime juice, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  • Warm the tortillas in a skillet or microwave for easier handling.

Assembly

  • Divide the filling among the tortillas and add optional toppings like fresh cilantro or lettuce.
  • Fold in the sides of the tortilla and roll tightly to form wraps.
  • Cut in half if desired and serve immediately.

Notes

Use ripe avocados for best flavor and adjust spiciness by varying the jalapeño amount. Store leftovers in airtight containers in the fridge for up to 2 days.
